- 1-1/2 cups all-purpose flour - 1/2 tsp. baking powder - 1/2 tsp. salt - 1/2 cup I Can't Believe It's Not Butter!® Spread - 2/3 cup PLUS 1/4 cup sugar - 1 egg - 1 tsp. vanilla extract

Instructions
Preheat oven to 350°. Grease baking sheets; set aside.
Combine flour, baking powder and salt in medium bowl; set aside.
Beat I Can't Believe It's Not Butter!® Spread with 2/3 cup sugar in large bowl with electric mixer until light and fluffy, about 5 minutes. Beat in egg and vanilla, scraping sides occasionally. Beat in flour mixture. Drop dough by rounded tablespoonfuls, 2 inches apart on prepared baking sheets.
Add remaining 1/4 cup sugar in small bowl. Moisten flat bottom of a glass with water, then dip moistened bottom in sugar. Gently flatten 1 cookie with glass. Repeat with remaining cookies, dipping glass just in sugar before flattening each cookie.
Bake 9 minutes or until done. Let stand 2 minutes on wire rack; remove from sheets and cool completely.
