Ingredients
1-1/2 lbs. assorted Cut-up Fresh Vegetables*
3 Tbsp. I Can't Believe It's Not Butter!® Spread, melted
2 cloves garlic, finely chopped
1 Tbsp. chopped fresh oregano leaves or 1 tsp. dried oregano leaves, crushed
Salt and ground black pepper to taste
Instructions

Preheat oven to 450°.

Combine all ingredients in broiler pan without the rack. Roast 20 minutes or until vegetables are tender, stirring once.

*Assorted Cut-up Fresh Vegetables - use any combination of the following: zucchini, red, green or yellow bell peppers, Spanish or red onions, white or portobello mushrooms and carrots.
