Ingredients
1/4 cup I Can't Believe It's Not Butter!® made with Olive Oil Spread, melted
1-1/2 lbs. assorted cut-up fresh vegetables*
1 Tbsp. balsamic vinegar
1 tsp. honey
1/2 tsp. dried thyme leaves, crushed
Salt and ground black pepper to taste
Instructions

Preheat oven to 425°.

Combine all ingredients in broiler pan without the rack. Roast 25 minutes or until vegetables are tender, stirring once.

*Assorted cut-up fresh vegetables - Use any combination of the following: zucchini, red, green or yellow bell peppers, Spanish or red onions, white or portobello mushrooms and carrots.
