Preheat oven to 400°.
Combine I Can't Believe It's Not Butter!® Sticks, herbs and, if desired, salt and pepper in small bowl. Rub herb mixture under and over chicken skin. Sprinkle chicken, if desired, with additional salt and black pepper.
Arrange chicken breast-side-up in 13 x 9-inch roasting pan with rack. Roast 1-1/4 hours or until meat thermometer inserted in thickest part of the thigh reaches 180°. Let stand 10 minutes before slicing.
TIP: Place whole sage leaves under skin before baking, if desired.
