  • 4 cups chopped assorted vegetables, (onion, zucchini and/or yellow squash)
  • 3/4 tsp. chili powder
  • 1 cup shredded 2 % cheddar cheese
  • 2 Tbsp. chopped fresh cilantro leaves
  • 4 (10-in.) burrito size flour tortillas
  • Directions

  • Melt 1 tablespoon I Can't Believe It's Not Butter!® Spread in large nonstick skillet over medium-high heat and cook vegetables with chili powder, stirring occasionally, until tender, about 10 minutes. Remove from heat and let stand until warm. Stir in cheese and cilantro.
  • Melt remaining 2 tablespoons Spread and brush one side of each tortilla. Turn tortillas over and arrange vegetable mixture evenly over half of each tortilla. Fold tortillas in half over filling.

  • 1/2 cup milk
  • 2 tsp. vanilla extract
  • Frosting

  • 6 cups confectioners sugar
  • 1 Tbsp. vanilla extract
  • Directions

  • For CAKE, preheat oven to 350°. Line bottoms of two 8-inch round cake pans with parchment or waxed paper, then grease and flour bottoms and sides of pans; set aside.
  • Combine flour and baking powder in medium bowl with wire whisk; set aside.
  • Beat granulated sugar with I Can't Believe It's Not Butter!® Spread in large bowl with electric mixer, scraping sides occasionally, until light and creamy, about 2 minutes. Add eggs and beat until blended. Beat in milk and vanilla. Gradually add flour mixture and beat just blended. Evenly spread batter into prepared pans.
  • Bake 45 minutes or until toothpick inserted in centers comes out clean. Cool 10 minutes on wire racks. Remove from pans; remove parchment paper and cool completely.
  • For FROSTING, Beat I Can't Believe It's Not Butter!® Spread in medium bowl with electric mixer until light and creamy, about 1 minute. Gradually add confectioners sugar and beat on low speed until blended. Add vanilla and beat until light and fluffy.
  • Place 1 cake layer on plate. Spread top with 3/4 cup of the frosting. Top with remaining cake layer and frost top and sides of cake with remaining frosting.

  • 1 large orange
  • 1 Tbsp. chopped fresh sage leaves
  • Directions

  • Season chops with salt and cracked black pepper. Melt 1 tablespoon I Can't Believe It's Not Butter!® Spread in large nonstick skillet over medium-high heat and cook chops, turning once, until done, about 8 minutes. Meanwhile, grate 1 teaspoon peel and squeeze 1/4 cup juice from orange. Remove chops to serving platter and keep warm.
  • Melt remaining 1 tablespoon Spread in same skillet over medium-high heat. Add orange juice and bring to a boil, scraping brown bits from bottom of pan. Boil 1 minute or until mixture reduces slightly. Remove from heat and stir in sage and orange peel. Drizzle over chops.

  • 1 large egg
  • 1/2 tsp. vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 1/2 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/4 cup white chocolate chips
  • 1/4 cup dried cranberries
  • 1 Tbsp. chopped crystallized ginger
  • 1 Tbsp. grated orange peel
  • Directions

  • Preheat oven to 375°. Put 3 tablespoons of the sugar in small bowl; set aside. Beat I Can't Believe It's Not Butter!® Spread with remaining sugar in large bowl with electric mixer until light and fluffy, about 2 minutes. Beat in egg and vanilla, scraping sides occasionally, until blended. Gradually beat in flour, baking powder and baking soda just until blended. Stir in white chocolate chips, cranberries, ginger and orange peel.
  • Shape dough into 1-inch balls and arrange 3-inches apart on ungreased baking sheets. Dip bottom of glass into water, then reserved sugar and gently press onto balls to flatten to about 2-inch circles.
  • Bake 12 minutes or until edges are lightly golden. Cool 2 minutes on wire rack; remove from sheets and cool completely.
