Simple Chicken Soup

Ingredients

  • 2 tsp. I Can't Believe It's Not Butter!® Spread
  • 1 cup chopped carrots
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 4 cups low fat reduced sodium chicken broth
  • 1 cup cut-up cooked chicken breast (about 5 oz.)
  • 2 Tbsp. flat-leaf parsley (optional)

Directions

  1. Melt I Can't Believe It's Not Butter!® Spread in 4-quart saucepot over medium heat and cook carrots, onion and celery, stirring occasionally, until tender, about 8 minutes. Add broth and bring to a simmer. Stir in chicken and cook 2 minutes or until heated through. Garnish with parsley.
