2 Tbsp. I Can't Believe It's Not Butter!® All Purpose Sticks
1 medium orange or red bell pepper, finely chopped
1 medium onion, chopped
8 ounces ground turkey
1 can (15.5 oz.) black beans beans, rinsed and drained
2 Tbsp. lime juice
1/2 tsp. ground chipotle chile pepper
2 Tbsp. finely chopped fresh cilantro, divided
1 bag (9 oz.) baked tortilla chips
2 cups shredded cheddar cheese (about 8 oz.)
1 large tomato, chopped
Directions
Preheat oven to 450°.
Melt I Can't Believe It's Not Butter!® All Purpose Sticks in 12-inch skillet over medium heat and cook orange pepper and onion, stirring occasionally, 5 minutes or until vegetables are tender. Stir in turkey, beans, lime juice and chipotle chile pepper. Cook, stirring occasionally, 5 minutes or until turkey is throughly cooked. Stir in 1 tablespoon cilantro.
Arrange chips on oven-proof platter, pizza or baking pan. Top with turkey mixture, then sprinkle with cheese and tomato. Bake 2 minutes or until cheese is melted. Sprinkle with remaining 1 tablespoon cilantro and serve, if desired, with sour cream, guacamole and sliced jalapeno pepper.
