Arrange cod in center of 18 x 18-inch piece heavy-duty aluminum foil, then top with shallot and lemon. Wrap foil loosely around cod, sealing edges airtight with double fold; arrange packets on baking sheet. Bake 20 minutes or until cod flakes with fork.
