Heat 1 tablespoon (15 mL) oil in large, deep skillet over medium-high heat and brown pork; remove and set aside.
Heat remaining 1 tablespoon (15 mL) oil in same skillet and cook onion, celery, carrots and potato, stirring occasionally, 8 minutes or until crisp-tender. Stir in water, Knorr® Demi-glace Classic Roast Gravy Mix, mustard and thyme. Bring to a boil over high heat whisking constantly. Reduce heat to low and cook covered, stirring occasionally, 20 minutes or until vegetables are tender.
Return pork to skillet and heat through. Serve with parsley, and if desired, hearty multi-grain bread.
Use lean beef or lamb instead of pork. As an extra time saver, substitute frozen mixed vegetable for fresh vegetables.
