Quick Winter Stew

Ingredients
- 2 Tbsp. vegetable oil, divided
- 1 lb. boneless pork loin or leg, cut into 1-in. (2.5 cm) cubes
- 1 small onion, chopped
- 2 stalks celery, chopped
- 2 carrots, chopped
- 1 medium potato, cut into 1/2-in. (1.5 cm) dice
- 0 g water
- 1 package Knorr® Demi-Glace Classic Roast Gravy Mix
- 1 Tbsp. Dijon mustard
- 1/2 tsp. dried thyme leaves (optional)
Directions
- Heat 1 tablespoon (15 mL) oil in large, deep skillet over medium-high heat and brown pork; remove and set aside. Heat remaining 1 tablespoon (15 mL) oil in same skillet and cook onion, celery, carrots and potato, stirring occasionally, 8 minutes or until crisp-tender. Stir in water, Knorr® Demi-glace Classic Roast Gravy Mix, mustard and thyme. Bring to a boil over high heat whisking constantly. Reduce heat to low and cook covered, stirring occasionally, 20 minutes or until vegetables are tender.
- Return pork to skillet and heat through. Serve with parsley, and if desired, hearty multi-grain bread.
- Use lean beef or lamb instead of pork. As an extra time saver, substitute frozen mixed vegetable for fresh vegetables.
