1 medium zucchini, quartered lengthwise and thickly sliced
1/3 cup chopped red or green pepper
3 Tbsp. water
1 package Knorr® Sundried Tomato Parmesan Pasta Seasonings
1/2 cup crumbled feta cheese
1/4 cup sliced black olives (optional)
8 ounces rotini, cooked and drained
Heat oil over medium-high heat in large skillet and cook zucchini with red peppers, stirring occasionally, 3 minutes or until tender-crisp. Stir in water and Knorr® Sundried Tomato and Parmesan Pasta Seasoning Mix. Reduce heat to low and cook 3 minutes. Stir in cheese and olives, then toss with hot rotini. Serve immediately.
