Vegetable Pasta Toss

Ingredients
- 1 Tbsp. vegetable oil
- 1 medium zucchini, quartered lengthwise and thickly sliced
- 1/3 cup chopped red or green pepper
- 3 Tbsp. water
- 1 package Knorr® Sundried Tomato Parmesan Pasta Seasonings
- 1/2 cup crumbled feta cheese
- 1/4 cup sliced black olives (optional)
- 8 ounces rotini, cooked and drained
Directions
- Heat oil over medium-high heat in large skillet and cook zucchini with red peppers, stirring occasionally, 3 minutes or until tender-crisp. Stir in water and Knorr® Sundried Tomato and Parmesan Pasta Seasoning Mix. Reduce heat to low and cook 3 minutes. Stir in cheese and olives, then toss with hot rotini. Serve immediately.
- If you love Italian sausage, stir in 1/2 lb. cooked sausage with vegetables.
