Ingredients

  • 4 medium potatoes (about 2 lbs.), peeled, if desired, and cut into large chunks
  • 6 Tbsp. I Can't Believe It's Not Butter!® Spread
  • 1 large shallot or small onion, thinly sliced
  • 2 tsp. fresh rosemary leaves
  • 3/4 tsp. salt
  • 1/8 tsp. ground black pepper

Directions

  1. Preheat oven to 450°.
  2. Combine all ingredients in large bowl. Arrange potato mixture in 13 x 9-inch baking or roasting pan. Roast, stirring occasionally, 50 minutes or until potatoes are tender and golden.
