Roasted Spiced Sweet Potatoes

Ingredients

  • 8 large sweet potatoes (about 4 lbs.)
  • 1/2 cup I Can't Believe It's Not Butter!® Spread
  • 1/2 cup firmly packed dark brown sugar
  • 1/2 tsp. ground ginger
  • 1/2 tsp. ground nutmeg
  • 1/2 tsp. salt
  • 1/4 tsp. ground black pepper
  • 1/4 tsp. ground cloves (optional)

Directions

  1. Preheat oven to 425°. Bake potatoes 45 minutes or until very soft. Peel potatoes. Mash potatoes in large bowl, then blend in remaining ingredients. Spoon onto serving plates or pipe through a pastry bag to serve.
  • NOTE: Recipe can be halved.
