Poached Eggs Florentine

Ingredients

  • 2 slices seeded whole wheat French baguette (3/4-inch thick)
  • 10 sprays I Can't Believe It's Not Butter!® Spray Original
  • 4 cups baby spinach leaves
  • 2 eggs, poached

Directions

  1. Evenly spray bread slices with 5 sprays I Can't Believe It's Not Butter!® Spray Original. Toast, then set aside.
  2. Preheat medium nonstick skillet over medium-high heat. Add spinach and spray with remaining 5 Sprays. Cook, stirring occasionally, 1 minute or until spinach starts to wilt. Season, if desired, with black pepper. Top bread with spinach, then eggs.
