Classic Rice Pilaf

Ingredients

  • 2 tsp. I Can't Believe It's Not Butter!® Light Spread
  • 3/4 cup uncooked brown rice
  • 1/4 cup chopped onion
  • 1/8 tsp. ground black pepper
  • 1/8 tsp. dried thyme leaves, crushed, (optional)
  • 1 3/4 reduced sodium chicken broth [or vegetable broth ]
  • 1 tsp. fresh parsley leaves, (optional)

Directions

  1. In medium saucepan, melt Spread over medium-high heat and cook rice, onion, pepper and thyme, stirring occasionally, 4 minutes or until rice is golden. Stir in broth. Bring to a boil over high heat. Reduce heat to low and simmer covered 40 minutes. Let stand 5 minutes. Stir in parsley.
  • NOTE: Recipe can be halved.
