Caramelized Apple & Onion Salad

Ingredients

  • 1/4 cup I Can't Believe It's Not Butter!® Spread
  • 2 large Granny Smith apples [or other tart apples], peeled, cored and thinly sliced
  • 1 large onion, sliced
  • 6 cups mixed salad greens [or mesclun]
  • 1/2 cup balsamic vinaigrette dressing
  • 1/2 cup toasted chopped walnuts [or pecans] (optional)

Directions

  1. Melt I Can't Believe It's Not Butter!® Spread in large skillet over medium-high heat and cook apples and onion, stirring occasionally, 4 minutes or until tender. Reduce heat to medium and cook uncovered, stirring occasionally, 20 minutes or until apple and onion are golden brown. Serve warm apple mixture over greens. Drizzle with Dressing and garnish with walnuts.
