Moroccan Couscous

Ingredients

  • 1/4 cup I Can't Believe It's Not Butter!® made with Olive Oil Spread
  • 1 small onion, chopped
  • 1 medium carrot, grated
  • 1/8 tsp. curry powder
  • 2 cups chicken broth
  • 1/2 cup raisins
  • 1/2 tsp. seasoned salt
  • 1 1/2 cups couscous
  • 1/2 cup sliced almonds, toasted

Directions

  1. Melt I Can't Believe It's Not Butter!® made with Olive Oil Spread in 2-quart saucepan over medium-high, heat and cook onion and carrot, stirring occasionally, 4 minutes or until tender. Stir in curry powder and cook, stirring frequently, 1 minute. Stir in broth, raisins and seasoned salt. Bring to a boil over high heat. Remove from heat and stir in couscous. Cover and let stand 5 minutes. Stir in almonds and fluff with fork.
