Unfried Chicken Skewers

Ingredients

  • 6 Tbsp. I Can't Believe It's Not Butter!® Spread, divided
  • 1 1/2 lbs. boneless, skinless chicken breasts, cut into strips
  • 1/2 cup all-purpose flour
  • 2 eggs, lightly beaten
  • 1 cup seasoned panko bread crumbs
  • 1/2 cup barbecue sauce

Directions

  1. Preheat oven to 400°. Line 2 baking sheets with parchment paper, then evenly brush with 2 tablespoon melted Spread. Thread chicken on 18 skewers*; dip into flour to coat. Dip into beaten egg, then bread crumbs to coat. Arrange on prepared baking sheets. Brush chicken skewers with remaining 1/4 cup melted Spread.
  2. Bake until chicken is thoroughly cooked, about 8 to 10 minutes. Serve with prepared BBQ Sauce.
  • *If using wooden skewers, soak in water at least 30 minutes prior to use.
