Ring Around the Egg Breakfast Sandwich

Ingredients

  • 2 Tbsp. I Can't Believe It's Not Butter!® Spread, divided
  • 2 slices red bell pepper, about 1/2-inch thick
  • 2 eggs
  • 4 slices whole grain bread
  • 2 cups arugula

Directions

  1. Melt 1 tablespoon I Can't Believe It's Not Butter!® Spread in a medium nonstick skillet over medium-high heat. Arrange red pepper in skillet, then gently break egg into the centers of peppers. Cover and cook until desired doneness.
  2. Meanwhile, toast bread, then evenly spread with remaining 1 tablespoon Spread. Evenly top 2 slices of bread with arugula, cooked egg, then remaining bread.
