Zucchini & Yellow Squash Medley

Ingredients

  • 3 Tbsp. I Can't Believe It's Not Butter!® Spread
  • 1 lb. zucchini and/or yellow squash, halved lengthwise then sliced crosswise, (about 4 cups)
  • 1 clove garlic, minced
  • 1 cup grape tomatoes, halved
  • 2 Tbsp. chopped fresh mint leaves

Directions

  1. Melt I Can't Believe It's Not Butter!® Spread in large nonstick skillet over medium-high heat and cook squash and garlic 10 minutes, stirring occasionally, until vegetables are tender and lightly browned.
  2. Remove from heat. Stir in tomatoes and mint.
