Baked Buttery Seafood

Ingredients
- 1 1/4 -lb. cod fillet
- 2 plum tomatoes, chopped
- 2 green onions, sliced
- 1/4 cup pitted Kalamata olives, chopped
- 3 Tbsp. I Can't Believe It's Not Butter!® Spread
- 1/4 tsp. EACH dried thyme leaves, basil, oregano and crushed rosemary
Directions
- Preheat oven to 375°.
- Arrange cod in 2-quart baking dish. Combine tomatoes, green onions, olives, I Can't Believe It's Not Butter!® Spread and herbs in bowl. Pour mixture over cod.
- Bake 25 minutes or until fish flakes with a fork.
TIP: Also delicious with salmon, tilapia, halibut or shrimp!
Love capers? Just substitute 2 Tablespoons capers for 2 Tablespoons kalamata olives.
