Baked Buttery Seafood

Ingredients

  • 1 1/4 -lb. cod fillet
  • 2 plum tomatoes, chopped
  • 2 green onions, sliced
  • 1/4 cup pitted Kalamata olives, chopped
  • 3 Tbsp. I Can't Believe It's Not Butter!® Spread
  • 1/4 tsp. EACH dried thyme leaves, basil, oregano and crushed rosemary

Directions

  1. Preheat oven to 375°.
  2. Arrange cod in 2-quart baking dish. Combine tomatoes, green onions, olives, I Can't Believe It's Not Butter!® Spread and herbs in bowl. Pour mixture over cod.
  3. Bake 25 minutes or until fish flakes with a fork.

TIP: Also delicious with salmon, tilapia, halibut or shrimp!

Love capers? Just substitute 2 Tablespoons capers for 2 Tablespoons kalamata olives.
