Sauteed Snow Peas & Baby Carrots

Ingredients

  • 1 Tbsp. I Can't Believe It's Not Butter!® Spread
  • 2 Tbsp. chopped shallots or onion
  • 5 ounces frozen whole baby carrots, partially thawed
  • 4 ounces snow peas (about 1 cup)
  • 2 tsp. chopped fresh parsley (optional)

Directions

  1. Melt I Can't Believe It's Not Butter!® Spread in 12-inch nonstick skillet over medium heat and cook shallots, stirring occasionally, 1 minute or until almost tender. Add carrots and snow peas and cook, stirring occasionally, 4 minutes or until crisp-tender. Stir in parsley and heat through.
  • NOTE: Recipe can be doubled.
