Preheat oven to 350°. Grease 9-x 5-x 3-inch loaf pan; set aside.
Grate the peel and squeeze 1/4 cup lemon juice from lemons; set aside.
Combine flour, sugar, baking powder and salt in large bowl. Cut in I Can't Believe It's Not Butter!® Spread with pastry blender or two knives until mixture is size of small peas. Stir in 1 tablespoon lemon peel. Beat eggs, milk, lemon juice and vanilla in small bowl with fork; stir into flour mixture, just until moistened. Evenly spoon batter into prepared pan; sprinkle with remaining lemon peel.
Bake 1 hour or until toothpick inserted in center comes out clean. Cool 20 minutes on wire rack; remove from pan and cool completely.
