Orange-Pineapple Muffins

Ingredients

  • 21/2 cups all-purpose flour
  • 1 Tbsp. baking powder
  • 3/4 tsp. salt
  • 1/2 tsp. baking soda
  • 3/4 cup granulated sugar
  • 1/3 cup I Can't Believe It's Not Butter!® All Purpose Sticks, melted
  • 1 egg
  • 1 to 2 tsp. grated orange peel
  • 1 cup orange juice
  • 1 cup finely chopped pineapple

Directions

  1. Preheat oven to 400°. Grease 12-cup muffin pan; set aside.
  2. Combine flour, baking powder, salt and baking soda in large bowl; set aside.
  3. Combine sugar, I Can't Believe It's Not Butter!® All Purpose Sticks, egg, orange peel and orange juice with wire whisk in another bowl. Make a well in center of dry ingredients; pour in wet ingredients, stirring just until moistened. Stir in pineapple. Evenly spoon into prepared pan.
  4. Bake 20 minutes or until toothpick inserted in centers comes out clean. Cool 10 minutes on wire rack; remove from pan and cool completely.
