2 Tbsp. I Can't Believe It's Not Butter!® made with Olive Oil Spread
1 cup regular or converted rice
1 small onion, chopped
1/4 tsp. salt
1/8 tsp. ground black pepper
1/8 tsp. dried thyme leaves, crushed (optional)
1-3/4 cups chicken broth
1/4 cup toasted slivered almonds
1 tsp. chopped fresh parsley (optional)
Directions
Melt I Can't Believe It's Not Butter!® made with Olive Oil Spread in 2-quart saucepan over medium-high heat and cook rice, onion, salt, pepper and thyme, stirring occasionally, 4 minutes or until rice is golden. Add broth and bring to a boil over high heat. Reduce heat to low and simmer covered 20 minutes. Let stand 5 minutes. Stir in almonds and parsley.
