Asiago Herb Muffins

Ingredients

  • 3 cups all-purpose flour
  • 1 Tbsp. baking powder
  • 3/4 tsp. dried oregano leaves, crushed
  • 1/2 tsp. salt
  • 1/2 cup I Can't Believe It's Not Butter!® made with Olive Oil Spread
  • 1 Tbsp. sugar
  • 2 eggs
  • 1-1/2 cups milk
  • 2-1/4 cups shredded asiago cheese (about 18 oz.)

Directions

  1. Preheat oven to 400°. Grease muffin pans; set aside.
  2. Combine flour, baking powder, oregano and salt in medium bowl; set aside.
  3. Beat I Can't Believe It's Not Butter!® made with Olive Oil Spread with sugar in large bowl with electric mixer on medium-high speed until light and fluffy, about 5 minutes. Beat in eggs, scraping sides occasionally. Alternately beat in flour mixture and milk just until blended. Stir in 2 cups cheese. Evenly spoon batter into prepared pans, then sprinkle with remaining cheese.
  4. Bake 18 minutes or until toothpick inserted in centers comes out clean. Cool 10 minutes on wire rack; remove from pans. Serve warm.
