3/4 cup uncooked brown rice
1/4 cup chopped onion
1/8 tsp. ground black pepper
1/8 tsp. dried thyme leaves, crushed (optional)
1-3/4 cups reduced sodium chicken broth or vegetable broth
1 tsp. chopped fresh parsley (optional)
Directions
In 2-quart saucepan, melt Spread over medium-high heat and cook rice, onion, pepper and thyme, stirring occasionally, 4 minutes or until rice is golden. Stir in broth. Bring to a boil over high heat. Reduce heat to low and simmer covered 40 minutes. Let stand 5 minutes. Stir in parsley.
