- 1/2 cup I Can’t Believe It’s Not Butter!® Olive Oil Spread”
- 1 medium eggplant, peeled and diced
- 3 cloves garlic
- 1 Tbsp. lemon juice
- 1 Tbsp. finely chopped fresh parsley leaves
Preheat oven to 450°.
Melt I Can’t Believe It’s Not Butter!® made with Olive Oil Spread in shallow roasting pan. Add eggplant and garlic; toss to coat. Roast, stirring once, 30 minutes or until eggplant is very tender.
Process eggplant, garlic and lemon juice in food processor or blender until smooth. Stir in parsley. Season, if desired, with salt and ground black pepper. Serve with your favorite vegetable dippers or pita chips.
