    • Make a baked sweet potato with taco toppings, and I Can’t Believe It’s Not Butter! (which per serving has 60 calories and 70% less saturated fat than butter).


    • Preheat the oven to 400, wash the potato, poke a few holes in it, and pop it in the the oven for about an hour.


    • Prep your toppings. I like to use cheese, cilantro, avocado, onions, sour cream, salsa.


    • Put it all together, and just like that, you’ve got yourself a tasty meal! YUM!
