  • In a skillet, melt the I Can’t Believe It’s Not Butter and then stir in the sugar and balsamic vinegar. Stir in the chopped onions and separate them from each other, and toss with the melted butter combo. Let simmer over low heat for 30 minutes, stirring often.

  • Peel, cube and boil potatoes in a large pot of water. Once soft, drain and mash with the I Can’t Believe It’s Not Butter, milk and salt and pepper. Note: add more I Can’t Believe It’s Not Butter or milk to your preferred creaminess.

  • Gently stir in the caramelized chopped onions into the creamy mashed potatoes.

  • Serve Caramelized Onion Mashed Potatoes with chopped chives garnish, warm as side dish.
