- 1 1/4 cups all-purpose flour
- 3/4 cup whole wheat flour
- 1 Tbsp. baking powder
- 1 tsp. baking soda
- 1/8 tsp. salt
- 1/2 cup I Can’t Believe It’s Not Butter!® Original Spread
- 1 Tbsp. sugar
- 2 eggs
- 1 cup buttermilk
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup fresh chives
Preheat oven to 400°. Grease 12-cup muffin pan; set aside.
Combine flours, baking powder, baking soda and salt in medium bowl; set aside.
Beat I Can’t Believe It’s Not Butter!® Spread with sugar in large bowl with electric mixer on medium-high speed until light and fluffy, about 5 minutes. Beat in eggs, scraping sides occasionally. Alternately beat in flour mixture and milk just until blended. Stir in 1 cup cheese and chives. Evenly spoon batter into prepared pan, then sprinkle with remaining cheese.
Bake 18 minutes or until toothpick inserted in centers comes out clean. Cool 10 minutes on wire rack; remove from pan. Serve warm.
