Cranberry Vanilla Sugar Cookies

  • 2 1/2 cups all-purpose flour

  • 1/4 cup dried cranberries

  • 1 tsp. grated lemon peel

  • 1/2 tsp. baking soda

  • 1/2 tsp. cream of tartar

  • 1/4 tsp. salt

  • 3/4 cup I Can’t Believe It’s Not Butter!® All Purpose Sticks

  • 10 Tbsp. granulated sugar, divided

  • 1/3 cup confectioners sugar

  • 1 egg

  • 1/2 tsp. vanilla extract


  • Preheat oven 350°.

  • Combine flour, cranberries, lemon peel, baking soda, cream of tartar and salt in medium bowl; set aside.

  • Beat I Can’t Believe It’s Not Butter!® All Purpose Sticks, 1/2 cup granulated sugar and confectioners sugar in large bowl with electric mixer until light and fluffy. Beat in egg and vanilla until blended. Gradually beat in flour mixture just until blended.

  • Shape dough into 1-inch balls, then roll in remaining 2 tablespoons granulated sugar; arrange on ungreased baking sheets, 2 inches apart. Flatten each with bottom of glass.

  • Bake 10 minutes or until edges are slightly golden. Cool 2 minutes on wire rack; remove cookies from sheets and cool completely.
