Thumbprint Cookies

  1. Preheat oven to 350°.
  2. Combine flour, salt and baking powder in medium bowl; set aside
  3. Beat I Can't Believe It's Not Butter!® All Purpose Sticks with sugar in large bowl with electric mixer on medium-low speed just until combined, about 2 minutes. Beat in egg and vanilla. Beat in flour mixture with mixer on low speed just until mixture begins to form a dough. Roll dough into 1-inch balls and arrange on ungreased cookie sheets. Make a thumb print in the center of each cookie, then fill with 1/2 teaspoon jam.
  4. Bake 13 minutes or until slightly golden around edges. Remove cookies to wire rack and cool completely. Just before serving, lightly sprinkle, if desired, with confectioners sugar.
