No-Mess Banana Muffins

  • 3 large ripe bananas*
  • 1 cup I Can't Believe It's Not Butter!® Spread
  • 3/4 cup firmly packed light brown sugar
  • 2 large eggs
  • 1 tsp. vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp. baking soda
  • 1 tsp. ground cinnamon
  • 1/4 tsp. salt


  1. Preheat oven to 350°. Grease 12-cup muffin pan with additional I Can't Believe It's Not Butter!® Spread or line with paper cupcake liners; set aside.
  2. Put bananas in large resealable plastic bag and squeeze until mashed. Add I Can't Believe It's Not Butter!® Spread, brown sugar, eggs and vanilla and squeeze bag until combined. Add remaining ingredients and squeeze bag until blended.
  3. Snip off a corner of bag, then pipe mixture into prepared muffin pan.
  4. Bake 20 minutes or until toothpick inserted in centers comes out clean. Cool 10 minutes on wire rack; remove from pan and serve warm or cool completely.

TIP: To ripen bananas quickly, bake unpeeled bananas on baking sheet at 350°, about 15 minutes or until skins have blackened. Slice skins open and scoop out banana.
