- 4 Tbsp. I Can’t Believe It’s Not Butter!® Original Spread
- 1/4 cup chopped natural almonds
- 6 cups baby kale
- 2 cups cooked farro
- 1/4 tsp. ground cumin
- 2 tsp. lime juice
- 1 small avocado, diced
- 8 Bibb lettuce leaves
Melt 1 tablespoon I Can’t Believe It’s Not Butter!® Spread in large nonstick skillet over medium heat and cook almonds, stirring frequently, until toasted, about 2 minutes; remove and set aside.
Melt remaining 3 tablespoons Spread in same skillet over medium-high heat. Add kale, farro, and cumin and cook, tossing, until kale is wilted and mixture is hot, about 2 minutes.
Stir in lime juice, then avocado. Spoon into lettuce leaves and sprinkle with almonds.
