Herbed Cod in Foil Packets

Ingredients

  • 1 lb. boneless cod fillet

  • 1 shallot or small onion, chopped

  • 4 slices lemon

  • 2 Tbsp. I Can’t Believe It’s Not Butter!® Whipped & Creamy Taste

  • 2 Tbsp. finely chopped assorted fresh herbs (parsley, chives, basil, cilantro or dill)

Directions

  • Preheat oven to 425°.


  • Arrange cod in center of 18 x 18-inch piece heavy-duty aluminum foil, then top with shallot and lemon. Wrap foil loosely around cod, sealing edges airtight with double fold; arrange packets on baking sheet. Bake 20 minutes or until cod flakes with fork.


  • Carefully open foil, then top with I Can’t Believe It’s Not Butter!® Whipped & Creamy Taste and herbs.
