- 1 lb. boneless cod fillet
- 1 shallot or small onion, chopped
- 4 slices lemon
- 2 Tbsp. I Can’t Believe It’s Not Butter!® Whipped & Creamy Taste
- 2 Tbsp. finely chopped assorted fresh herbs (parsley, chives, basil, cilantro or dill)
Preheat oven to 425°.
Arrange cod in center of 18 x 18-inch piece heavy-duty aluminum foil, then top with shallot and lemon. Wrap foil loosely around cod, sealing edges airtight with double fold; arrange packets on baking sheet. Bake 20 minutes or until cod flakes with fork.
Carefully open foil, then top with I Can’t Believe It’s Not Butter!® Whipped & Creamy Taste and herbs.
