- 1 lb. carrots, peeled and sliced diagonally
- 2 tsp. pure maple syrup or pancake syrup
- 1 Tbsp. whole grain Dijon mustard
- 2 Tbsp. sliced green onions
Melt 2 Tbsp. I Can’t Believe It’s Not Butter!® Vegan Spread In large nonstick skillet over medium-high heat and cook carrots, stirring occasionally, until tender, about 10 minutes.
Add syrup and mustard and toss over medium-high heat until glazed, about 1 minute.
Stir in remaining 1 Tbsp. Spread and garnish with green onions.
