- 3 large ripe bananas*
- 1 cup I Can’t Believe It’s Not Butter!® Original Spread
- 3/4 cup firmly packed light brown sugar
- 2 large eggs
- 1 tsp. vanilla extract
- 2 cups all-purpose flour
- 1 tsp. baking soda
- 1 tsp. ground cinnamon
- 1/4 tsp. salt
Preheat oven to 350°. Grease 12-cup muffin pan with additional I Can’t Believe It’s Not Butter!® Spread or line with paper cupcake liners; set aside.
Put bananas in large resealable plastic bag and squeeze until mashed. Add I Can’t Believe It’s Not Butter!® Spread, brown sugar, eggs and vanilla and squeeze bag until combined. Add remaining ingredients and squeeze bag until blended.
Snip off a corner of bag, then pipe mixture into prepared muffin pan.
Bake 20 minutes or until toothpick inserted in centers comes out clean. Cool 10 minutes on wire rack; remove from pan and serve warm or cool completely.
