One Pot Mac and Cheese

  • 16 ounces elbow pasta

  • 3 cups water

  • 1 teaspoon salt

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • 3 tablespoon I Can’t Believe It’s Not Butter

  • 2 cups whole milk

  • 1 cup shredded sharp white cheddar

  • 3/4 cup Swiss cheese or 4 slices of Natural Swiss Cheese

  • 1/4 cup grated Parmesan

  • 1/3 cup Cauliflower Florets

  • 1/4 cup Shredded Carrots


  • Cook the pasta: Bring pasta, water, all seasonings and I Can’t Believe It’s Not Butter to a boil. Reduce heat and simmer until pasta has absorbed most of the water and is very al dente–about 7 minutes.

  • Add in milk, sharp white cheddar cheese, swiss cheese, grated parmesan cheese, cauliflower florets, and shredded carrots and cook, stirring constantly, over medium heat until pasta has absorbed milk and the cheese has melted – about 5-7 minutes.
