Pineapple Pork Tenderloin

  • Recipe Serves 4 servings


  • 20 oz of trimmed Pork Tenderloin

  • 1 lb Sweet Potato cut into 1 inch slices

  • 1 can (10 oz) Pineapple chunks

  • 1 lb sweet potato

  • 12 oz green beans (trimmed)

  • 3 Tbsp I Can’t Believe It’s Not Butter!® Original Spread

  • 1/2 tsp paprika

  • 1/2 tsp thyme

  • 1/2 tsp cayenne pepper

  • 1/2 ground ginger

  • Salt and pepper


  • Preheat oven to 450.

  • Coat baking sheet with nonstick spray.

  • Boil sweet potatoes for 15 minutes.

  • While the sweet potatoes boil. In a bowl, mix together: ginger, paprika, thyme, cayenne, salt and pepper. Rub Pork with spice mixture. Drizzle with 1 Tbsp of melted I Can’t Believe It’s Not Butter!®.

  • Place sweet potatoes, green beans and pineapple on the baking sheet, top with 2 Tbsp of melted I Can’t Believe It’s Not Butter!®, salt, and pepper.

  • Sear pork in frying pan (1 minute each side).

  • Place pork on baking sheet next to pineapple and sweet potatoes.

  • Roast for 35 minutes. Remove from oven.

  • Transfer pork to cutting board and thinly slice. Serve with sweet potatoes and pineapple.
