- Recipe Serves 4 servings
- 20 oz of trimmed Pork Tenderloin
- 1 lb Sweet Potato cut into 1 inch slices
- 1 can (10 oz) Pineapple chunks
- 1 lb sweet potato
- 12 oz green beans (trimmed)
- 3 Tbsp I Can’t Believe It’s Not Butter!® Original Spread
- 1/2 tsp paprika
- 1/2 tsp thyme
- 1/2 tsp cayenne pepper
- 1/2 ground ginger
- Salt and pepper
Preheat oven to 450.
Coat baking sheet with nonstick spray.
Boil sweet potatoes for 15 minutes.
While the sweet potatoes boil. In a bowl, mix together: ginger, paprika, thyme, cayenne, salt and pepper. Rub Pork with spice mixture. Drizzle with 1 Tbsp of melted I Can’t Believe It’s Not Butter!®.
Place sweet potatoes, green beans and pineapple on the baking sheet, top with 2 Tbsp of melted I Can’t Believe It’s Not Butter!®, salt, and pepper.
Sear pork in frying pan (1 minute each side).
Place pork on baking sheet next to pineapple and sweet potatoes.
Roast for 35 minutes. Remove from oven.
Transfer pork to cutting board and thinly slice. Serve with sweet potatoes and pineapple.
