- 2 Tbsp. I Can’t Believe It’s Not Butter!® Original Spread
- 2 slices red bell pepper, about 1/2-inch thick
- 2 eggs
- 4 slices whole grain bread
- 2 cups arugula
Melt 1 tablespoon I Can’t Believe It’s Not Butter!® Spread in a medium nonstick skillet over medium-high heat. Arrange red pepper in skillet, then gently break egg into the centers of peppers. Cover and cook until desired doneness.
Meanwhile, toast bread, then evenly spread with remaining 1 tablespoon Spread. Evenly top 2 slices of bread with arugula, cooked egg, then remaining bread.
