- 1 lb. red potatoes, cut into 1-inch chunks, (about 4 cups)
- 1 cup chopped red onion
- 1/4 tsp. salt
- 8 ounces kale, trimmed and chopped, (about 6 cups)
Melt I Can’t Believe It’s Not Butter!® Spread in large nonstick skillet over medium-high heat. Add potatoes, onion and salt; reduce heat to medium and cook covered, stirring occasionally, until potatoes are tender, about 15 minutes.
Add kale and cook, stirring frequently, until kale is wilted and tender, about 3 minutes.
