- Recipe Serves 4 servings
- 1 lb chicken tenders diced
- 2 cloves minced garlic
- 2 Tbsp. of I Can’t Believe It’s Not Butter!® Original Spread
- 2 medium zucchinis
- 2 cups frozen corn and carrots
- 1/4 cup almond butter
- 2-4 Tbsp chicken broth
- 2 Tbsp sweet thai chili sauce
- 1 tsp ground ginger
- Salt and pepper
Season chicken with salt and pepper.
Sauté chicken using I Can’t Believe It’s Not Butter!®, garlic, corn and carrots over medium heat until chicken is cooked.
Spiralize zucchini to make zoodles, and set aside.
Combine almond butter, chicken broth, sweet Thai chili sauce and ginger.
Pour sauce into pan and mix well.
Put zoodles in the pan and sauté for 1-2 minutes. Be careful not to sauté for too long, as zoodles can get soggy very easily (keep in mind, the objective is to “warm up” the zoodles, rather than “cook” them).
Add salt and pepper.
