- 3 lbs. Russet potatoes, peeled and cubed
- 1 3/4 cups chicken broth
- 1/4 cup half & half
- 6 Tbsp. I Can’t Believe It’s Not Butter!® All Purpose Sticks
- 1/4 tsp. salt
- 1/8 ground black pepper
Bring potatoes, 1 cup broth and enough cold water to cover potatoes to a boil over high heat in large saucepot. Reduce heat and simmer uncovered until potatoes are tender, about 15 minutes; drain.
Combine potatoes with remaining ingredients until smooth and creamy.
