- 3 Tbsp. I Can’t Believe It’s Not Butter!® Original Spread
- 1 lb. zucchini and/or yellow squash, halved lengthwise then sliced crosswise, (about 4 cups)
- 1 clove garlic, minced
- 1 cup grape tomatoes, halved
- 2 Tbsp. chopped fresh mint leaves
Melt I Can’t Believe It’s Not Butter!® Spread in large nonstick skillet over medium-high heat and cook squash and garlic 10 minutes, stirring occasionally, until vegetables are tender and lightly browned.
Remove from heat. Stir in tomatoes and mint.
