Banana Oatmeal Bread

Ingredients

  • 9 Tbsp. I Can’t Believe It’s Not Butter!® Original Spread

  • 2 cups all-purpose flour

  • 1 tsp. baking powder

  • 1/2 tsp. baking soda

  • 1/2 tsp. salt

  • 1/4 tsp. ground nutmeg

  • 1/2 cup uncooked quick oats or old fashioned oats

  • 1 1/2 cups bananas

  • 2 eggs

  • 2 Tbsp. milk

  • 1 cup sugar

  • 1/2 cup raisins

  • 1/4 cup chopped walnuts

Directions

  • Preheat oven to 350°. Grease 9 x 5 x 3-inch loaf pan with 1 tablespoon I Can’t Believe It’s Not Butter!® Spread; set aside.


  • Combine flour, baking powder, baking soda, salt and nutmeg in large bowl. Stir in oats; set aside.


  • Whisk mashed banana, eggs, remaining 8 tablespoons Spread (1/2 cup), milk and sugar in large bowl until blended. Stir in raisins and walnuts. Stir into flour mixture just until moistened. Evenly pour batter into prepared pan.


  • Bake 1 hour to 1 hour 10 minutes until toothpick inserted in center comes out clean. Cool 20 minutes on wire rack; remove from pan and cool completely.
