Butterscotch Oatmeal Cookies

  • 2 cups all-purpose flour

  • 2 cups uncooked quick oats or old fashioned oats

  • 1 tsp. baking soda

  • 3/4 tsp. salt

  • 1 cup I Can’t Believe It’s Not Butter!® Original Spread

  • 1 3/4 cups firmly packed dark brown sugar

  • 2 large eggs

  • 1 tsp. vanilla extract

  • 1 cup butterscotch morsels

  • 1 cup chopped nuts


  • Preheat oven to 375°. Grease baking sheets; set aside.

  • Combine flour, oats, baking soda and salt in large bowl; set aside.

  • Beat I Can’t Believe It’s Not Butter!® Spread with sugar in large bowl with electric mixer until light and fluffy. Beat in eggs, one at a time, beating well after each addition. Beat in vanilla. Beat in flour mixture until blended. Stir in butterscotch morsels and nuts. Drop mixture on prepared baking sheets by tablespoonfuls, 2 inches apart.

  • Bake 10 minutes or until edges are golden. Let cool 2 minutes on wire rack; remove from sheets and cool completely.
