Cilantro-lime Shrimp

  • 1 lb. uncooked large shrimp, peeled and deveined
  • 2 Tbsp. lime juice
  • 1 tsp. grated lime peel
  • 2 cloves garlic
  • 1 tsp. cornstarch
  • 1/4 tsp. salt
  • 1/4 cup I Can't Believe It's Not Butter!® All Purpose Sticks
  • 1/4 cup dry white wine or chicken broth
  • 2 Tbsp. chopped fresh cilantro


  1. Toss shrimp, lime juice, grated lime peel and garlic in large bowl. Let stand 15 minutes. Sprinkle with cornstarch and salt.
  2. Melt I Can't Believe It's Not Butter!® All Purpose Sticks in large nonstick skillet over medium-high heat and cook shrimp mixture, stirring occasionally, 3 minutes or until shrimp turn pink. Stir in wine and bring to a boil. Reduce heat to low and simmer, stirring constantly, 1 minute. Stir in cilantro. Serve, if desired, over hot cooked rice and sprinkle with additional cilantro.
