- 4 medium Russet potatoes or Yukon Gold potatoes (about 2 lbs.), peeled and cut into 1/2-in. dice
- 2 large or 4 medium golden beets (about 1 lb.), peeled and cut into 1/2-in. dice
- 2 cups whole milk
- 2 cloves garlic
- 1 tsp. kosher salt or 1-1/2 tsp. table salt
- 4 tsp. I Can’t Believe It’s Not Butter!® Original Spread
Preheat oven to 375°. Put potatoes, beets, milk, garlic, and salt in large oven proof saucepan. Bring to a simmer over medium-high heat. Cover with lid and bake until potatoes and beets are tender, about 30 minutes.
Remove from oven with oven mitt.. Mash potatoes and beets; stir in I Can’t Believe It’s Not Butter! ® Spread.
