Instructions

  1. Add chocolate and I Can't Believe It's Not Butter! Spread to the top of a double boiler and and cook 6 minutes or until the chocolate has melted and the mixture is smooth. Stir in half and half until smooth. Remove from heat and stir in pistachios and biscotti pieces. Cover and refrigerate about 1-1/2 hours or until firm but moldable.
  2. Divide chocolate mixture in half. Place half of the mixture in the center of an 18-inch-long piece of plastic wrap. Form mixture into a log, about 7 inches long and 2 inches wide. Roll up the log in the plastic and twist the ends to seal. Roll back and forth on work surface a few times to make the log evenly round. Repeat with the remaining chocolate mixture. Refrigerate 1 hour or until until firm.
  3. To serve: Spread confectioners' sugar on a plate. Remove logs from plastic wrap, then roll in sugar until evenly coated. Shake off extra sugar. Let the logs sit at room temperature for 15 to 30 minutes. Using a sharp knife, cut the logs into slices and serve.
You can use any of your favorite nuts and cookies in place of pistachios and biscotto. Just use about 2 cups total volume.
